Crockpot Bell Pepper and Pineapple Chicken

Chicken, bell peppers, and pineapple served over rice pilaf. This is a great freezer meal and fantastic for days when you need a quick and easy meal that checks off most of the important food groups. Put your own twist on it by adding a sauce if you'd like. Serve it over whatever type of rice you like!

Ingredients
  

  • 1 lb Boneless Skinless Chicken
  • 1 can Pineapple Slices
  • 2 Bell Peppers
  • 1-2 pkg Rice Pilaf

Optional

  • Soy Sauce
  • Teriyaki Sauce
  • BBQ Sauce
  • Honey
  • Brown Sugar

Instructions
 

  • Place chicken in the bottom of the crockpot, layer pineapple and pepper strips on top of chicken (covering the chicken to the best of your ability to keep it moist).
  • Turn crockpot on High for 4 hours or until chicken is cooked through. (If you are making this from frozen you will likely need closer to 6-8 hours on high or alternatively you can thaw overnight in the refrigerator prior to cooking.)
  • Prepare rice according to package.
  • Serve chicken, fruit, and veggies over rice. Enjoy!

Notes

You can use any kind of chicken, we prefer using boneless, skinless chicken breasts or tenderloins but thighs would also work. We've also made this recipe using a pre-cooked rotisserie chicken before and that works fine as well, it is a bit more costly though.
We love to use fresh pineapple and bell peppers but if all you can afford is canned or frozen, that's fine too.
Rice Pilaf is our favorite to serve this over, but white rice or brown rice work fine as well.
If you are looking to add more flavor to the recipe, you can add a number of sauces or ingredients as I've listed above. If you are looking to thicken the sauce, simply stir in 1 tablespoon of cornstarch 30 minutes prior to serving, this will help thicken it without the flavor of uncooked flour.
Calorie estimate is based off of 2 pkg of Uncle Ben's Ready Rice Rice Pilaf, a 20oz can of Pineapple Slices packed in Pineapple Juice, 2 Green Bell Peppers, and 1 lb of boneless skinless chicken breast.
